  • 6 large oranges (preferably Seville oranges for a bitter flavor)
  • 1 lemon
  • 6 cups water
  • 6 cups granulated sugar

Instructions

  1. Wash the oranges and lemon. Use a sharp knife or a vegetable peeler to remove the outer zest from the oranges and lemon.
  2. Slice the zest into thin strips or finely chop it according to your preference. Set it aside. Cut the oranges and lemon in half and squeeze out their juice. Strain the juice to remove any seeds.
  3. In a large, heavy-bottomed pot, combine the zest strips, orange juice, lemon juice, and water. Boil the mixture over medium-high heat.
  4. Once the mixture starts boiling, reduce the heat to low and let the mixture simmer uncovered for about 45 minutes to 1 hour, or until the zest is soft and translucent.
  5. Add sugar, stirring until completely dissolved. Increase the heat to medium-high and bring the mixture to a rapid boil.
  6. Continue boiling the marmalade, stirring frequently, until it reaches the desired consistency. This typically takes about 15-20 minutes. To test the consistency, place a small amount of marmalade on a chilled plate. If it sets and wrinkles when pushed with a finger, it's ready.
  7. Once the marmalade has reached the desired consistency, remove it from the heat and let it cool slightly.
