It should look shiny, smooth and soft.

Use a sieve to add flour and cocoa powder. At this point, we added a package of vanillin powder but you can also add vanilla extract before adding the powders. Lastly, add the salt and start mixing it from bottom to top with a spatula. Using spatula will prevent our brownie to turn into a cake, but instead inside will stay wetter. Ingredients

  • 3 large eggs
  • 240 grams sugar
  • 320 grams dark chocolate (at least 60% cocoa ratio)
  • 125 grams butter (at room temperature
  • 25 grams of cacao powder
  • 93 grams flour
  • 1 pack of vanillin powder / 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Whisk the eggs and sugar well in a bowl. Once the sugar melts completely, set this mixture aside.
  2. In another bowl, melt the chocolate. Before the chocolate gets cold, add the butter and let it melt down. Wait for this mixture to reach at room temperature so when you add it into eggs and sugar blend, eggs will not change their form.
  3. Combine the two mixtures well. You can use a mixer at low speed. You don’t need to mix for long time.
  4. Use a sieve to add flour, cocoa powder, vanillin powder and salt.
  5. Start mixing all ingredients together from bottom to top with a spatula. This process can take time but the result will worth it.
  6. Oil the bakeware, set the baking paper and oil the paper too. So the paper will stick to the bakeware, and it will be easy to remove the brownie out.
  7. Bake the brownie at 180 °C (356 °F) for 25 minutes.
  8. Set the brownie aside and let it cool down until it reaches the room temperature.
  9. Slice it, and serve it with your favorite toppings, such as grated white chocolate, ice cream or chocolate sauces.

Notes

  • Before adding the chocolate into eggs and sugar mixture, be sure that the chocolate is not hot. Otherwise, eggs may curdle, and blend will change its form.
  • Do not rush while mixing the ingredients with spatula. Do it slowly.
