Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and pepper

Instructions

  1. Rinse the chicken breasts and pat them dry with paper towels. Season both sides of the chicken breasts with salt and pepper.
  2. In a small bowl, mix together the olive oil, minced garlic, dried thyme, dried rosemary and dried oregano. Juice one lemon and add it to the mixture.
  3. Place the chicken breasts in shallow dish or a zip-top plastic bag. Pour the marinade over the chicken breasts, ensuring that each breasts is coated evenly. Allow chicken breasts to marinade for at least 30 minutes but up to 24 hours in fridge, to let the flavors infuse.
  4. Heat an oven-safe skillet over medium-high heat. Add a little olive oil and sear the chicken breasts for 2-3 minutes on each side, or until golden brown. Slice the second lemon into thin rounds and place them on top of each chicken breasts in the skillet.
  5. Additionally, you can transfer the skillet to the preheated oven to 200 °C (400 °F) and bake for 20-25 minutes, until the chicken is cooked through. Once cooked, remove the skillet from the oven.
  6. Serve the lemon herb chicken breasts with your favorite side dishes, such as rice, salad or roasted vegetables.
