Ingredients
For Crepes:
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk
- 1 cup water
- 1 teaspoon salt
- 1 tablespoon olive oil
For Fillings:
- 1 cup mixed beries (raspberries, blueberries and blackberries)
- 1/2 cup almonds,
- Honey and chocolate sauce for drizzling
Instructions
- In a blender, combine flour, eggs, milk, water, salt and olive oil. Blend until smooth. You can let the batter rest for 30 minutes in the refrigerator.
- Heat a crepe pan over medium heat. Pour a laddle of batter into the center of the pan, swirl to spread evenly. Cook for about 1-2 minutes or until the edges start to lift. Flip and cook for additional 1 minute. Repeat with the remaining batter.
- Lay out each crepe and add berries, sprinkle of almonds. Drizzle with honey and a bit of chocolate sauce.
- You can serve the crepes with a dollop of orange marmalade on the side.
