We start with boiling the pasta by following the package instructions. While the pasta is boiling, we start preparing tomato sauce in another pot. Heat the olive oil first. Once the oil is heated, add the minced garlic and tomato paste. Let them cook for few minutes. Add the grated tomatoes and spices. Mix them well and let the sauce simmer for 5 minutes.

Save a cup of pasta water and add it into sauce. Combine pasta and sauce together and let them rest. After 5 minutes, you can serve the pasta with a touch of Parmesan cheese if you like. That’s it! Ingredients

  • 500 grams of your favorite pasta (spaghetti, penne, etc.)
  • 3 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 2 cloves garlic, minced
  • 2 medium size tomatoes, grated
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. In a large pot, start boiling the pasta as written in the package instructions.
  2. In another pot, start cooking the tomato sauce. Add olive oil first and heat it. Once the oil is heated, add the minced garlic, tomato paste and stir them well. Add the grated tomatoes and spices. Mix them well and let the sauce simmer for 5 minutes so it will get thickened.
  3. When the pasta is ready, set a cup of pasta water aside and add it into sauce. Add pasta into sauce and mix them well.
  4. Set the pasta aside and let it rest for few minutes.
  5. Garnish with fresh basil or parsley, if desired. Serve hot, with optional Parmesan cheese on top.
