Ingredients

  • 4 medium-sized tomatoes, diced
  • 1 medium-sized onion, sliced
  • A handful of fresh parsley
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon thyme
  • A pinch of black pepper
  • A pinch of red pepper flakes
  • 2 poached chicken breasts (cut into pieces)

Instructions

  1. Chop the tomatoes and onion, finely chop the parsley, and place them in a bowl.
