Ingredients

  • 1 slice whole wheat bread
  • 1/2 Avocado, mashed
  • Lemon juice
  • Salt and black pepper
  • 1 whole egg
  • 2 teaspoons butter
  • 30 grams Mozzarella cheese, grated

Instructions

  1. Toast the whole wheat bread in the toaster or pan.
  2. Cut the avocado into half and smash it with a fork in a small bowl. Add few drops of lemon juice, and a pinch of salt.
  3. Spread the mashed avocado onto your toasted bread.
  4. Whisk the egg well in a bowl until the yolk and white are compeletely combined.
  5. Heat butter above high heat until it melts completely. Pour in the egg mixture and start cooking. Add the grated Mozzarella cheese and keep stirring until ready.
  6. Top the bread and avocado with egg. Sprinkle black pepper and sesame seeds (if desired). Serve it warm with a cup of tea or coffee.

Notes

  • Use ripe avocados.
  • You can add any topping you desire, such as tomatoes, onions, or smoked salmon.
  • Use thick slice of bread so the toast will not fall apart.
