Ingredients

  • 1 kg beef stew, cut into bite-sized pieces
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 cups water
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 4 large carrots, peeled and diced
  • Chopped fresh parsley for garnish
  • 3 tablespoons olive oil
  • 2 tablespoons vinegar
  • 1 cup all purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Season the beef stew meat with salt and black pepper. In a large pot, heat the olive oil over medium-heat. Fry the beef on all sides until brown and set them aside.
  2. In the same pot, add onions and garlic. Cook until they soften.
  3. Add the carrots, green onions, tomato paste, thyme and bay leaves. Saute them for 1-2 minutes.
