Including only vegetables and bulgur, this recipe is suitable for vegans. Long story short, bulgur pilaf is a great dish to choose when it comes to consumption of healthy carbohydrates and vitamins. This Turkish bulgur pilaf recipe will change the common idea that says grains do not taste well.

Let’s get into cooking! Rinse the bulgur and set it aside. Start preparing the vegetables. Peel the tomatoes and then dice all the vegetables. Above high heat, heat the olive oil in a medium-sized pot. Once the oil gets hot, add onions and cook them until they soften. Then, add tomato paste and stir well. Add green and red peppers, cook until they soften. Add the bulgur and salt, cook for 5 minutes until all ingredients mix well. Pour in the warm water, cover the lid and let it cook.

When the water is soaked completely, that means bulgur pilaf is ready. Put a paper towel between the lid and pot, and cover the lid. Set the pot aside and leave bulgur for rest for about 10 minutes. Serve it warm, with meat, chicken, or vegetables.

Ingredients

  • 2 cups bulgur
  • 2 tomatoes, peeled and diced
  • 2 onions, diced
  • 2 green peppers, diced
  • 1 red pepper, diced
  • 1 tablespoon tomato paste
  • 4 cups warm water
  • 2 tablespoons olive oil
  • 1 teaspoon salt

Instructions

  1. Rinse the bulgur first and set it aside.
  2. Dice the onions, tomatoes, green peppers, and red pepper.
  3. Heat the olive oil above high heat. Add onions and cook until they soften. Then, add tomato paste and mix well.
  4. Add the green and red peppers. Once peppers soften, add tomatoes, bulgur and salt. Mix all ingredients well for 5 minutes.
  5. Pour in the warm water and close the lid of pot. Let bulgur cook until the water disappears.
  6. Once the water is soaked completely, remove the pot and place a paper towel between the pot and the lid.
  7. Let it rest for 10 minutes.
  8. Serve it with meat, chicken or roasted vegetables.

  • Pay attention to bulgur during the cooking process so it will not get burn.
