Ingredients

  • 3 eggplants, roasted
  • 2 cloves garlic, minced
  • 4 tablespoons yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash the eggplants and open holes on them with a sharp knife. Place eggplants on a bakeware which is covered with baking paper. Roast them in oven set to 200°C (392°F) for 30 minutes. Once they are roasted, set them aside to cool down.
  2. Peel the warm eggplants and chop them into small pieces.
  3. Put mashed eggplants into a bowl. Add mayonnaise, yogurt, garlic, salt and black pepper, and mix them well.
  4. Serve it as a side dish.

Notes

  • You can use canned roasted eggplant puree if you do not have time to cook.
