Start with making holes on eggplants with a sharp knife. Send them to oven set to 200°C (392°F) for 30 minutes. Once they cool down, peel the eggplants and cut them into small pieces. Transfer them into a bowl. Add mayonnaise, yogurt, minced garlic, salt, and black pepper, and mix them well. And here it is: A perfect appetizer to serve your guests!

- 3 eggplants, roasted
- 2 cloves garlic, minced
- 4 tablespoons yogurt
- 1 tablespoon mayonnaise
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Wash the eggplants and open holes on them with a sharp knife. Place eggplants on a bakeware which is covered with baking paper. Roast them in oven set to 200°C (392°F) for 30 minutes. Once they are roasted, set them aside to cool down.
- Peel the warm eggplants and chop them into small pieces.
- Put mashed eggplants into a bowl. Add mayonnaise, yogurt, garlic, salt and black pepper, and mix them well.
- Serve it as a side dish.
Notes
- You can use canned roasted eggplant puree if you do not have time to cook.
