Turkish pita, also known as pide, is a boat-shaped flatbread that’s typically filled with a variety of ingredients such as minced meat, cheese, vegetables, or even eggs. Each region of Turkey has its own variation, but Bafra Pita—originating from the Black Sea town of Bafra—is especially iconic.

What sets the traditional Bafra pita apart is its slightly thinner crust and juicy ground beef filling, often enriched with green peppers, tomatoes, and onions. The dough is soft and light thanks to a simple yeast-based preparation, and it’s baked until beautifully golden.

For this recipe, we visited one of the most popular Bafra pita restaurants in Istanbul, and the owner of the restaurant, Satılmış Usta shared his special, and most traditional Turkish Bafra pita recipe with us. Thanks to him, we are able to share the original Bafra pita recipe with you!

Ingredients

To make one serving of this traditional Turkish bafra pita, you’ll need:

For the Dough:

All-purpose flour (500g): Provides the base structure for a soft and chewy pita.

Instant yeast (1 packet / ~7g): Gives the dough its rise and light texture.

Salt & sugar (1 tsp each): Salt enhances flavor, while sugar activates the yeast.

Vegetable oil (1 Turkish tea glass / ~100ml): Adds moisture and a slight richness to the dough.

Warm water (1 cup / ~240ml): Helps activate the yeast and bind the dough.

For the Filling:

Ground beef (300g): Choose lean but not too dry meat for the perfect texture.

Onion (1, grated): Adds sweetness and moisture to the filling.

Green peppers (2, finely chopped): Bring a bit of crunch and mild spice.

Tomatoes (2, grated): Create a juicy base for the meat mixture.

Parsley (a handful, chopped): Gives freshness and a pop of color.

Salt, black pepper, red pepper flakes (to taste): Add warmth and depth of flavor.

How to Make Turkish Pita (Bafra Pita)?

1. Prepare the Dough

  • In a large mixing bowl, pour in the flour and make a well in the center.
  • Add the instant yeast, salt, and sugar to the middle.
  • Pour in the warm water and vegetable oil.
  • Knead everything into a smooth, slightly sticky dough.
  • Cover with a cloth and let it rest in a warm place for about 1 hour, until doubled in size.

💡 Tip: A warm oven (turned off) or a sunny windowsill makes a perfect rising spot.

2. Make the Filling

  • While the dough is rising, combine ground beef, grated onion, chopped peppers, grated tomatoes, parsley, and seasonings in a bowl.
  • Mix well until all ingredients are fully combined.

💡 Tip: Let the filling sit for 10–15 minutes to let the flavors meld before using.

3. Shape the Pita

  • After the dough has risen, take a piece about the size of a walnut.
  • On a floured surface, flatten it by hand or with a rolling pin into an oval shape.
  • Place a spoonful of the meat mixture in the center, leaving room on the edges.
  • Fold the sides inward, pinching the ends to create a boat shape.

💡 Tip: Don’t overfill—the juices should stay inside the crust without overflowing.

4. Bake

  • Place the shaped pita on a baking sheet lined with parchment paper.
  • Bake in a preheated oven at 200°C (392°F) for 20–25 minutes or until golden brown.

💡 Tip: For a golden finish, you can brush the edges with a little oil or egg yolk before baking.

Key Notes

  • Fresh is best: Use fresh, ripe tomatoes and high-quality ground beef for the most authentic flavor.
  • Let the dough rest: This is key to achieving a fluffy, airy texture.
  • Optional cheese: You can sprinkle a bit of mozzarella or Turkish kaÅŸar cheese for a richer taste.
  • Watch the oven: Every oven is different—check your pita around the 18-minute mark to avoid overbaking.

  4. Fill and Seal: Spread a generous amount of the filling in the center of the dough. Fold the edges over slightly, pinching the ends to create the traditional Bafra Pita shape.
  5. Bake: Place the filled pita on a baking sheet lined with parchment paper. Bake in a preheated oven at 200°C (392°F) for 20–25 minutes, or until golden brown.

Notes

  • Oil Tip: A light brush of oil over the dough before baking helps it brown beautifully.
  • Resting Matters: Don’t skip the rising time—the dough’s fluffiness depends on it!
